Bowl
14 cups
Price
$180 to $300

Why it ranks here. The Custom 14 is the food processor r/BuyItForLife names first, with owners at 23, 25, 30 and 45 years, and the one America's Test Kitchen keeps rating first. It ranks first for that record. Newer units draw complaints that build has slipped, and at 18 pounds it is a lot of machine for one onion.

'I'm 23 years into my 14 cup Cuisinart and it still looks and works like new', says one owner. Another: 'We've had ours for 30+ years. Had to replace the lid a few years ago, but they still make the parts'. One's is 'older than me. I'm 45. It does everything'. A Robot Coupe owner calls it 'not only the best home unit, it's also the easiest to clean'. The motor is 'quiet and Low pitched'. Then the new ones: 'I shelled out for a Cuisinart a few years back, several things broke immediately and I can't run it without holding the bowl down'. A 32-year owner whose bowl finally broke says 'the "new" Cuisinart is just not what it used to be' and moved to a Breville. 'New Cuisinarts are hit or miss. Older ones were better', agrees another. Bowls crack eventually, and it is bulky.

What owners like

  • '23 years into my 14 cup Cuisinart and it still looks and works like new'
  • 'they still make the parts' for a 30-year-old machine
  • 'the easiest to clean' next to a KitchenAid and a Robot Coupe

What owners complain about

  • A newer unit where 'several things broke immediately'
  • 'New Cuisinarts are hit or miss. Older ones were better'
  • Fifteen inches tall and 18 pounds; overkill for small jobs

  • Robot Coupe for the food processor. But if you're buying for the home, a Robot Coupe is really overkill. Like hunting cockroaches with dynamite kind of overkill. Meanwhile, the Cuisinart DFP-14 will serve you well. I have owned others, including Kitchen Aid (and Robot Coupe). The Cuisinart is not only the best home unit, it's also the easiest to clean.

Price
$280 to $400

Why it ranks here. The Sous Chef is the step up: a 1,200 to 1,450 watt direct-drive motor, an adjustable slicing disc, an optional peel-and-dice kit that turns potatoes into fries, and a 25-year motor guarantee. It ranks second because it costs $280 to $400 and is too new for anyone to vouch for its thirtieth year.

'My Breville 16 souls is seriously next level mirepoix, sofrito, cheese, potatoes, hollandaise,.. everything prep', says a cook who works privately: 'It paid for itself after one job. The adjustable slicer is a game changer'. Another 'splurged and bought the peel and dice kit': 'French fries peeled and cut in 5 mins'. A Cuisinart owner of 32 years calls it 'the new "workhorse" that I will be able to rely on for the rest of my cooking days'. One replaced 'a perfectly working 30+ year old one for the dicing function'. A four-year owner has 'haven't had any problems'. The cautions: 'Breville Sous Chef has the power, but motor lifespan is TBD'; cheese still gums the disc unless chilled; and it is overkill for a casual cook.

(maybe 4 years ago) I love it and haven't had any problems ...... everything seems to work as advertised.... when I purchased they were running a special .... sent in my receipt and received the other dicing blades free. Why it ranks here. The KitchenAid is the third name everyone says, and its dicing kit and snap-on bowl earn their keep on bulk jobs like 250 pounds of pears. It ranks third because its feed tube is too small, the dicing lid jams on ripe fruit, and owners say KitchenAid's small appliances are not what they were since Whirlpool.

One owner 'processed 250# of pears from my pear tree using the dicing kit', which jammed as the pears ripened until her husband pried the lid with a butter knife; still, 'The diced pears are easily dehydrated and I have LOTS thanks to this dicing kit'. Another finds it 'much better at slicing than my previous version'. The chute: 'I can absolutely confirm that the feeding tube is too small and therefore ineffective in most cases'. One owner's dough test 'almost threw itself off my island', and she sent it back: 'talk about going down hill!'. A daycare owner puréeing daily says 'I don't think it is bifl'; her last one lasted five years. One viewer reckons it is 'worth it in the $50-60 range not the hundred or so'.

It's our second Kitchenaid in that size, last one was a little smaller and lasted about 5 years... We also have the large Kitchenaid processor, Artisan and blender, and I think those are gonna last us forever, but then again, we don't use those every day.

$90 to $140

Why it ranks here. The Ninja is the value pick: a 1,000-watt motor and preset programs for dough, purées and hummus at $90 to $140. It ranks fourth because its plastic cracks within a few years for many owners, and one owner's blade assembly fell out mid-pour and cut her wrist open.

'I love my ninja food processor', says one owner, for latkes, bread dough and hummus: 'It's so fast and easy clean up'. A Christmas recipient makes baby food and butter with it: 'Itll pay for itself pretty quick'. One 2012 unit is '14 years later and going strong!!!!'. Then the plastic: 'they do a nice job until plastic starts breaking on the parts, then you have pieces of plastic in your food', says a former owner of a Ninja blender and processor. Another: 'the plastic on it breaks with regular use'; a third's 'broke after three years'. Carrot purée stains the bowl. And the warning: 'The inner part fell out onto my wrist while I was pouring and laid me open with three deep cuts requiring over 20 stitches'.

Under $60

Why it ranks here. The Hamilton Beach is the under-$60 first processor: tool-free assembly, 450 watts, fine for slaw, salsa and shredded cheese. It ranks last because food sticks around the blade shaft, it cannot knead, crush ice or grind spices, and even its fans note the mixed Amazon reviews.

'I didn't expect it to be the best, but it was priced right', says a buyer who paid $49.95 at Target for coleslaw. Another has made salad dressing, sliced vegetables, cheese and lunch meat, and a cheesecake batter: 'Everything has turned out great', and she is buying one as a gift. 'It chops onions, celery and peppers really good', says a third. The gripes: one shopper found a new one 'at a ridiculously cheap price' and still passed, because 'The stuck food being hard to clean is what helped me decide against it'. A fan admits 'Amazon's reviews are not that favorable for this item'. And the manual rules out coffee, spices, ice and dough.

What owners like

  • 'it was priced right' at $49.95
  • 'Everything has turned out great' for slicing, shredding and batters
  • Assembles without tools

What owners complain about

  • 'The stuck food being hard to clean' around the blade shaft
  • No dough, ice, coffee or spices, by the manual
  • 'Amazon's reviews are not that favorable for this item'

I already own this food processor... So far I have tried making Hudson's Maurice salad dressing, shredding and slicing vegetables, cheese, and lunch meat for appetizers. • The way you’re placing the food in the processor is the reason for the uneven slices. Most of the time when used in a professional kitchens they don’t use the press specifically for even slices, then taking the small end bit of whatever you’re processing and slicing it by hand.

Frequently asked questions

What size do I need?

Three to seven cups for one person or occasional use. Families who cook most days land on eleven to fourteen cups, the size of the Cuisinart Custom 14. Much bigger becomes awkward for mincing a single onion.

Is a $300 Breville or Magimix worth it over a $100 Ninja?

Owners say the dear machines have stronger motors, more precise slicing discs and longer warranties; Breville guarantees its motor for 25 years. The Ninja and the Hamilton Beach chop and shred fine, but their plastic parts are the ones that crack within a few years.

How do I shred cheese without mush?

Chill it, or freeze it for 20 to 30 minutes first. A former deli manager sprays the blade with cooking oil so the cheese does not stick or clump.

Can it knead dough, crush ice or grind spices?

The Cuisinart, KitchenAid and Breville knead bread and pizza dough with the dough blade. The Hamilton Beach is explicitly not rated for coffee, spices, ice or dough. Check the manual for the model, not the category.
